What does it mean to the French when a pastry is a work of art? How do the English spend their 5 o’clock teatime? What sweets do the Japanese eat, to remain optimistic and calm without gaining an ounce of weight?
Questions such as these towered above us as we were thinking about the bits and pieces of our new confectionery collection. But instead of waiting for a miracle we set off on a journey to the other end of the world, to learn from the best in the stronghold of modern confectionery.
For a year SUGAR! will revolve around Tokyo. At this exciting meeting of the two worlds we will see where the ball rolls if it is made of chocolate, we will taste what it’s like when something is at the same time soft and creamy, crispy and melting; and of course we will try wasabi, green tea, tofu and sesame, be it in the form of bubble gum, cake or candy.
